Spaghetti Squash "Noodles" with Homemade (Paleo-Friendly) Meat Sauce

Whole30 compliant, paleo "spaghetti" featuring spaghetti squash and a homemade meat sauce.

  • Spaghetti Squash
  • 1 Tablespoon coconut oil
  • 1 lb. ground beef
  • 1 onion
  • 2 cans diced tomatoes
  • 1 can tomato sauce
  • 1 can tomato paste
  • 4-8 oz. water
  • 1 bay leaf
  • 1 Tablespoon Italian Seasoning
  • Sea salt & pepper to taste
  1. Preheat oven to 375.
  2. Split spaghetti sauce in half, scrape out the seeds, drizzle with olive oil, salt and pepper. Bake rind side up, for 50-60 minutes until rind is soft to the touch. Use fork to create "noodles".
  3. While squash is cooking, heat coconut oil in large saucepan, brown ground beef and onion. Drain grease. Add remaining ingredients, including water, to desired consistency. Bring to a boil, then reduce heat to a simmer for an hour or so.
