Whole30 Journey: Week 4

Last week of Whole30! Keep reading to see what I ate this week! I have loved doing this, but am already dreaming about the first bite of cheese I will get next week! :)

Here’s how the week went:
Meal 1: Eggs and Zucchini Rounds
Meal 2: Leftover pork roast on salad greens, pea pods, cherry tomatoes, hard-boiled egg & cucumbers
Meal 3: Apple Bacon Burger and green beans
Observations: The Apple Bacon Burgers were great! Next time, I might combine the ground pork with some turkey, just to cut down on the richness. Today I started to dream about the first bite of cheese I will get to have in a week!
Meal 1: Eggs and Zucchini Rounds
Meal 2: Egg scramble with bacon, onions, bell peppers and tomato
Meal 3: Chocolate Chili topped with avocado
Observations: Yep, another day with eggs at 2 meals. I happened to be home for lunch today, and there just wasn’t anything else. The chocolate chili was good, but I did miss adding the cheese, sour cream, and crackers…I’m not gonna lie. :)
Meal 1: Scrambled eggs with onion, bell peppers & bacon
Meal 2: Chipotle (Romaine, carnitas (double meat), tomato salsa & guacamole)
Meal 3: Spaghetti with spaghetti squash noodles
Observations: Not much new! Feeling great and counting days the days until I can test out some dairy back in my diet!
Meal 1: Eggs & salsa
Meal 2: Chef salad
Meal 3: Lettuce wrap tacos
Observations: Nothing new! Weekends are a little tougher, with being around the house more, but I’ve been able to resist all the stuff I wouldn’t totally eaten pre-Whole30!
Meal 1: Scrambled eggs with bacon and salsa
Meal 2: Leftover spaghetti squash noodles and sauce
Meal 3: Steak and green beans
Observations: Hubby says my skin looks great, lol! I haven’t really noticed…although now that I think about it, I haven’t had a break-out in weeks!
Meal 1: Scrambled eggs
Meal 2: Chipotle (romaine, carnitas, mild salsa, guacamole)
Meal 3: Pork chop and broccoli
Observations: We are down to the last few days! Woohoo! I think I’ve continued to lost a little weight, as I was able to wear a pair of pants today that I haven’t worn in a while! I have been doing meal planning for Christmas, and there are so many tempting recipes out there – holy cow!!
Meal 1: Scrambled eggs with onion and bell peppers
Meal 2: Salad (romaine, spinach, cucumbers, cherry tomatoes, carrots…sprinkled with olive oil, salt and pepper)
Meal 3: Italian Crockpot Chicken Soup
Observations: The soup was great, and addition of coconut milk to make it a little creamy was great!
Meal 1: Eggs with salsa
Meal 2: Salad from the cafeteria at work
Meal 3: Eggs with onions and bell peppers
Observations: Totally screwed up today and forgot to thaw any meat for dinner!! So, another double egg day. :) Don’t get me wrong….I LOVE eggs, but even I am ready for a break from them, lol!
Meal 1: Scrambled eggs with onion & bell peppers
Meal 2: Lara Bara, nuts and baby carrots
Meal 3: Pork roast, green beans and homemade guacamole
Observations: Last day! Overall, this was an awesome experience, and I will for sure do more Whole30’s in the future. For starters, I lost 15 pounds, which I am thrilled about. I also tried several foods that I thought I would hate, but really ended up loving (like spaghetti squash!), and most of all, I proved to myself that I can do it! It’s been a long time since I stuck to something for a month. :)
I plan to stick to drinking more water, and not going back to Diet Coke….and also greatly reducing my daily sugar intake in the future. I really did feel better not consuming sugar.
