Whole30 Journey: Week 3

2 weeks down, 2 to go on the Whole30! I love that I am not consuming anything processed. AND that I was able to get through Thanksgiving without giving into anything sweet. :)

Here’s what I ate this week!
Meal 1: Egg bake with bell peppers, spinach and bacon
Meal 2: Turkey, baby carrots, grape tomatoes and mixed nuts
Meal 3: Spaghetti squash topped with Rao’s sauce (I added ground beef)
Observations: Well, I shoveled the driveway today, so I must have more energy, lol! I am loving spaghetti squash (never in a million years did I think I would ever say that!) and can’t wait to try more recipes using it!
Meal 1: Egg bake with bacon, spinach & bell peppers
Meal 2: Salad from cafeteria at work & banana
Meal 3: Fried eggs with white sweet potato hash browns
Observations: This was not the best day….my salad at lunch was not exciting, or that good! And, it was another day of eggs for 2 meals…I just didn’t feel like anything else for dinner!
Meal 1: Fried eggs with white sweet potato hash browns
Meal 2: Chipotle (lettuce, carnitas, tomato salsa, guacamole)
Meal 3: Homemade turkey soup
Observations: This was an awesome food day. SO GOOD! I was also able to wear a pair of jeans today that I hadn’t even been able to fasten lately, so that made it an even better day. :)
Meal 1: Larabar
Meal 2: White sweet potato hash browns, apple with cashew butter & organic, grass-fed beef hot dog
Meal 3: Turkey Soup
Observations: Still feeling great! Not much improvement with my headaches, which is a bummer. Clothes are continuing to fit better, and I am starting daydream about the first bite of cheese when I get to add dairy back in. ;)
Meal 1: Scrambled eggs with sweet potato hash brown, onions & bell peppers
Meal 2: Spinach salad with chicken breast, cherry tomatoes, cashews and salsa with some baby carrots
Meal 3: Steak and eggs, green beans
Observations: Highly recommend grilling up a large batch of chicken to have on hand! We use it for salads, like I did here today, and it is really a time saver when you don’t feel like cooking!
Meal 1: Eggs with Zucchini Rounds
Meal 2: Chicken breast/salsa, green beans, apple with cashew butter
Observations: O.M.G. The zucchini with scallops and bacon? Amazing. I really liked the zucchini round in the morning as well, and left out some zucchini when I made dinner, so I can make them again tomorrow!
Meal 1: Scrambled eggs with onion & bell peppers
Meal 2: Leftover zucchini noodles with scallops & bacon, apple & cashew butter
Meal 3: Pulled pork done in the crock pot with carrots and onions, pea pods
Observations: Again, the zucchini noodles with scallops were amazing the next day, and totally made my work day! :)
It’s hard to believe we only have 1 week left, and now I am starting to come up with my plan of attack for reintroducing certain foods. I am so glad I did this!
