Whole30 Journey: Week 2

We are still going to town on our Whole3 journey! My energy is pretty good, and can tell I’ve lost some weight.

Thanksgiving fell during this week, so read on to see how that played out!
Meal 1: Scrambled eggs with onion, bell peppers, cherry tomatoes, spinach, kale and swiss chard.
Meal 2: Spinach topped with 2 grilled chicken thighs, cherry tomatoes, avocado and salsa…with a handful of baby carrots
Meal 3: Grilled rib-eye, baby broccoli, 1/2 banana, almond butter
Observations: Breakfast was amazing, dinner was….blah. The steak was pretty tough, and since I usually eat my steak with ketchup (yes, you read that right), I tried topping it with salsa, but it just didn’t do it for me. Bummer. Tomorrow is Thanksgiving, and I am trying some new recipes to bring to brunch at my parents. I’m actually not too worried about being able to resist certain things. We’ll see how hard it is once they are in front of me. :)
Today was Thanksgiving!
Meal 1: Cashew Cookie Larabar
Meal 2: Thanksgiving brunch- sweet potato hash browns, fruit, Tomato, Bacon and Arugula quiche with sweet potato crust
Meal: Turkey and Roasted Root Vegetable Hash
Observations: Made it through a major holiday without feeling too terribly deprived. Shockingly, I didn’t miss the sweets very much…but the corn pudding at my parents house sure looked good!! The quiche recipe I brought for brunch was amazing and I will for sure make it again!
Meal 1: Leftover quiche from Thanksgiving
Meal 2: Scrambled eggs with tomato and spinach, pear
Meal 2: Beef pot roast with carrots & onions, baked sweet potato
Snack: Mixed raw nuts
Observations: Today was the first day where I thought to myself that I can’t wait until 30 days is over. :) The beef roast was less than exciting, and I had a lot of cravings all day.
Meal 1: Last piece of leftover quiche and a pear
Meal 2: Scrambled eggs with bell peppers, onions & spinach, baby carrots
Meal 3: Petite sirloin steak, baby green beans and a white sweet potato hash browns
Observations: We were in desperate need of groceries today. Can you tell by the amount of eggs I’ve eaten in the last two days? :) Thank goodness we got to the grocery store tonight and get some more meat & veggies! I was not all that hungry today…couldn’t even finish my lunch!
Meal 1: Eggs, bacon, and white sweet potato hash browns
Meal 2: Larabar, baby carrots and mixed nuts
Meal 3: Scallops, sugar snap peas and a pear
Observations: Coming up on the halfway point feels great! I cooked a whole turkey in the crock pot today, so that will be great for meals over the next few days. Hoping I can find a good soup recipe! Work up with a bigger headache than normal today, but it stayed manageable throughout the day and I think it was because I went to bed too late last night.
Meal 1: Frittata with bell peppers, cherry tomatoes & kale
Meal 2: Leftover turkey, baby carrots, apple & almond butter
Meal 3: Pork chop, broccoli/carrot/cauliflower and a few apple slices
Observations: One thing I have totally noticed is that I no longer hit a mid-afternoon slump…I used to have zero desire to do any dishes or picking up after I got home from work, and now I just dive right in. Also, making frittatas is dangerous! Every single time, after I take the pan out of the oven to cool for a bit, I end up grabbing it…thinking it is not going to be hot. When will I learn – geez! :)
Meal 1: White sweet potato hash browns, fried eggs
Meal 2: Leftover pork chop on top of spinach, with cherry tomatoes, salsa and baby carrots…cashews, apple and almond butter
Meal 3: Lettuce cup tacos with salsa and guacamole
Observations: Not much new, actually! I am still feeling great, not experiencing all that much hunger in between meals, and I can’t believe we are almost 2 weeks in!
