Party Tacos Recipe

Hi there! I can’t wait to share this recipe with you! It is a family favorite, usually served at birthday celebrations. I’ll just start out by confessing that this recipe is not exactly “figure friendly”, but OH MY is it good. and there is nothing wrong with splurging every now and again, right??

The full printable recipe is below, and the meat sauce can be made ahead of time which makes it great for parties since much of the prep can be done beforehand.
You start by browning ground beef and onions.
Then you add tomato sauce, tomato paste, water, garlic and spices. Let this simmer for about 40 minutes.
Add cooked rice and pinto beans and let simmer for an additional 5 minutes. I do all of this the day before, and then just heat everything up in a crock pot.
Then you layer everything, starting with Fritos. Yes….Fritos!
Ta da! The finished product! The dressing makes this dish!
This meal is very versatile as well. Skip the dressing if you want to save calories or go light on the Fritos and heavy on the lettuce!
Here is the recipe – ENJOY!
- Meat Sauce
- 2 lbs. ground beef
- 1 large onion, chopped
- 1 8 oz. can tomato sauce
- 1 6 oz. can tomato paste
- 2 cups water
- 2 TBSP. sugar
- 2 cloves garlic, minced
- 1 tsp. oregano
- 1 tsp. chili powder
- 1 tsp. salt
- 1 tsp. ground cumin
- 1 cup cooked rice
- 15 oz. can pinto beans
- 8 oz. cream cheese, softened
- 2 cups mayo
- 2 cups buttermilk
- 1 tsp. pepper
- 1 tsp. salt
- 1 tsp. onion salt
- 1 tsp. garlic powder
- Toppings: 24 oz. Fritos, 8 oz. shredded cheddar cheese, green onions, 1 head lettuce, tomatoes, olives, avocado
- Brown beef and onion and drain.
- Stir in rest of meat sauce ingredients, except rice and beans. Simmer 40 minutes.
- Stir in rice and beans and simmer 5 minutes longer.
- Combine all dressing ingredients in blender - mix well.
- Layer on plates.
Serve with some delicious fruit and you are all set!
