Watermelon Agua Fresca

I LOVE looking through food magazines, and I’ve been known to watch the Food Network from time to time. :) There are not enough hours in the day to try all of the recipes that I tear out of magazines or pin on Pinterest, but sometimes one just catches your eye and you have to make time for it.
Funny thing about this one is, I am not even a big fan of watermelon. I mean, it’s alright, but I don’t love it. This just sounded so refreshing that I needed to try it!
This is all you will need: watermelon (seedless, don’t be like me and use one with seeds because it took a long time to pick them all out!), honey, fresh lime juice and fresh mint.
Cube up the watermelon….you will need 8 cups.
Puree the watermelon in a blender.
Strain into a bowl through a sieve.
Then add the honey and lime juice and transfer to a pitcher. Stir in 1 1/2 cups water, lime slices and mint. Perfect for a hot day! See below for the full recipe!
*6 cups seedless watermelon cubes
*6 Tbsp. honey or agave nectar
*1/3 Cup fresh lime juice plus 1 sliced lime
*a few sprigs of mint
*1 1/2 cups water
Puree watermelon in blender. Strain into bowl through fine-mesh sieve. Stir in honey and lime juice. Transfer to pitcher; stir in 1 1/2 cups water, lime slices and mint. Chill; serve over ice.
