Pesto Pasta Salad

I just had to share this recipe with you, because it got rave reviews from my whole family! Even my boys called it a “home run”! It is based on an Ina Garten recipe, but I altered it a bit for our taste.
This was so easy to make! The whole things was put together in about 30 minutes, including boiling the noodles!
Here is the cast of characters:
After draining the noodles, the pesto and a few other ingredients get mixed together.
And then everything basically just get tossed together!
Pesto Pasta Salad with Peas and Pine Nuts
3/4 pound bowtie pasta
3/4 pound rotini pasta
1/3 cup extra virgin olive oil
1/3 cup pine nuts (I used a small bag)
1 1/2 cups pesto (either homemade or store bought)
2-3 ounces fresh baby spinach, torn
3 tablespoons lemon juice (fresh squeezed would be best)
2/3 cup mayonnaise
1 1/2 cups frozen peas, defrosted
1/2 cup shredded parmesan/romano mixture
3/4 teaspoon kosher salt
1/2 tsp black pepper
Bring salted pot of water to a boil. Add bowtie pasta and cook for 2 minutes, then add rotini and cook until both pastas are al dente. Drain and rinse with cold water. Toss with olive oil and set aside.
Toast the pine nuts. *Tip: you can toast them in the microwave. Place them on a microwave-safe plate and microwave on high for 30 seconds. Toss and repeat until toasted. It took me about 4 minutes to get them the way we like them.
In a large bowl, stir together the pesto, lemon juice, mayonnaise, salt and pepper. Add pasta, spinach, pine nuts, peas and cheese and toss until pasta is coated. Can be served immediately, but best chilled for a few hours to let flavors come together.
