Have you ever tried roasted chickpeas? I hadn’t until last year and boy was I missing out! I LOVED them!
I have found lots of different ways to make them, but here is what I found works best.
What you’ll need:
Can of Chickpeas
Olive Oil (just enough to coat, not drown them!)
Seasonings: Sea Salt, Smoked Paprika, Cumin
1) Preheat oven to 400° F.
2) Rinse chickpeas and drain well. Lay out on baking sheet and let dry (or pat dry) with a paper towel.
3) Toss with olive oil and seasonings. Bake for 35-45 minutes, gently shaking pan every 10 minutes, until golden brown and crunchy. Let cool before serving (after sneaking several to try), they get more crunchy after they cool. Store in airtight container.
*Hint: You’ll probably want to double this, because the first time I made these I ate the whole can and wished I had more!
Other seasonings to try: chili powder, cinnamon, garlic powder, black pepper, curry powder, rosemary, oregano…the sky is the limit really!
Besides being tasty, chickpeas are a great source of folic acid, fiber and manganese. They are also rich in iron, copper, zinc and magnesium.
They are a great source of protein.
They are low glycemic.
